Comminuted Lemon

Comminuted lemon refers to whole lemons that have been finely chopped or ground. This process typically involves the entire fruit, including the peel and pulp, to maximise flavour and aroma extraction. It is used to impart a natural lemon taste and scent to food products.

Manufacturers use comminuted lemon as a flavouring agent to provide a fresh, zesty citrus taste. It is commonly found in beverages, confectionery, baked goods, and sauces where a natural lemon profile is desired. Its inclusion can also contribute subtle fruity notes and a slight tartness.

Comminuted lemon is not a food additive and therefore does not have an E-number or require authorisation on the Register of Food Additive Authorisations. It is a natural food ingredient. The NHS Eatwell Guide advises limiting free sugars, and while lemons themselves are not a source of free sugars, products containing comminuted lemon may have added sugars or sweeteners. Evidence does not suggest adverse health effects from typical consumption of comminuted lemon as part of a balanced diet.
