Lemon extract

Lemon extract is a concentrated liquid flavouring derived from the peel and juice of lemons. It is produced by extracting the aromatic compounds from the fruit, often using solvents like ethanol or by pressing the peel. This process captures the characteristic zesty and citrusy notes of the lemon.

Manufacturers add lemon extract to impart a distinct lemon flavour and aroma to a wide variety of food products. It is commonly found in confectionery, baked goods, desserts, beverages, and savoury dishes like cooked chicken. Its intense flavour profile makes it a versatile ingredient for enhancing or creating citrus notes.

Lemon extract is generally recognised as a flavouring substance. In Great Britain, flavourings are subject to specific regulations, and those derived from natural sources like lemons are widely used. EFSA has evaluated flavourings, and while specific evaluations for individual extracts may vary, they are generally considered safe at typical consumption levels. No significant health concerns are associated with the consumption of lemon extract at levels found in food.
