Mushroom extract

Mushroom extract is a concentrated liquid or powder derived from mushrooms. It is produced by processing mushrooms, often through methods like extraction with water or solvents, followed by concentration and drying to capture their natural flavour and aroma compounds.

Mushroom extract is primarily used to enhance or impart a savoury, umami flavour to foods. Manufacturers add it to products like soups, gravies, sauces, and processed meals to deepen their taste profile and provide a more complex flavour without adding large amounts of solid ingredients.

Mushroom extract is not typically classified as a food additive and therefore does not have an E-number or require authorisation on the Register of Food Additive Authorisations. It is generally regarded as a flavouring substance. Regulatory bodies like EFSA evaluate flavourings, but specific evaluations for mushroom extract as a distinct ingredient are not widely publicised. At typical consumption levels found in food, it is not associated with adverse health effects.
